Which angle should I use?

12° or 15° for thin Japanese-style blades, 17° for small everyday knives, 19° for most chef's knives, and 22° for thick, heavy blades. Not sure? Start with 19°.

Does it work on serrated knives or scissors?

No. It's made for straight-edge knives. Bread knives and scissors need a different tool.

Will it damage my knives?

Not with normal use. If your knife is only a little dull, skip the coarse disc and use the fine one.

How often should I sharpen?

Most home cooks sharpen every few weeks. You'll notice when tomatoes start to squish instead of slice.
